Typical of the Natisone Valleys, “Gubana” is the traditional cake that every family in Friuli Venezia Giulia used to prepare for important events, the recipe that you will find in every grandmother’s cookbook.
Made of leavened sweet dough, wrapped by hand on itself to take the typical spiral shape, the gubana contains inside a rich filling of chopped hazelnuts, walnuts, raisins, pine nuts, almonds, lemon rind, and grappa. The dessert, which requires three days of processing to be prepared, is left to rise until the classic volume is reached, then baked in the oven.
